Rhubarb-strawberry jam

Rhubarb is growing like crazy in my backyard, so I found some favorite rhubarb-recipes, that’ll turn this delicious and colorful vegetable into something sweet! First up is jam! IMG_0070

All you need:

500 g of rhubarb
250 g of strawberries
2, 5 dl of sugar
2 tablespoons of vanilla sugar
2 tablespoons of cinnamon

Or you can just add whatever spicy things you think will go well with rhubarb.

What you gotta do:

  1. Slice and cut the strawberries and rhubarb into smaller pieces.
  2. Place the fruits, a splash of water (nothing more or less!) and half of the sugar into a pot and turn up the heat.
  3. Let it simmer until the fruits are very soft and easy to mash. Now add the rest of the sugar and your spices of choice. Let it all simmer and mash it until you get the consistency you prefer. Maybe run it through a blender, if you’re that type of jam-person.
  4. Boil your jars to clean them and add your fresh jam. Close it up and let it cool.
