Kale salad (that will kick your tastebuds butt!)

Truth be told: it’s my first time cooking with kale. And oh boy how I have missed out! This magnificent, green, vitamin bomb, with a taste that can really only be described as kale, can really bring the best out in other ingredients and vice versa. This salad is a perfect combination of sweet, sour, salt and bitter. So without further ado, here’s a must-try salad!

All you need:

Kale (cut of the stem)
1 apple
3 Dates (without stone)
Feta cheese
100 g of small potatoes
1 piece of free range chicken breast

Balsamic vinegar

Bread for on the side

 

What you gotta do:

  1. Boil your potatoes in a pot and fry the chicken on a pan.
  2. Cut, rinse and slice the kale (very finely), apple and dates and put it all in a salad bowl.
  3. Once the potatoes have boiled, cut them and cool them a little bit, then add them to the salad, along side with the chicken. If you prefer the chicken extra crispy, cut it in slices and heat it for a minute or two on the pan, before adding them to the salad.
  4. 1-2-3 you got yourself a wonderful salad. Top it off with a nice balsamic vinegar and some nice bread on this side.
