Stuffed bell peppers
Last night I made this super easy and tasteful side dish. A little something to, for example, replace potatoes or pasta with.
All you need:
2 bell peppers in color of your choice
Beans (I used a left-over bean salad)
In all its simplicity, cut and wash the peppers and fill them. Top it of with cheese, salt and pepper. Roast them in the oven for 15 minutes at 180 degrees. If you wanna go that extra mile add some nuts, for example walnuts.
I served mine on the side of some baked salmon. Colorful and healthy!
