Green veggie bowl

Super easy – super healthy and delicious! Here’s another 20-minute meal!

What you need:

Courghetti (1 courgette in strips)
1 dl sesame seeds
1 tablespoon of balsamic vinegar

3 handfuls of fresh spinach
Half a package of sugar snaps
Lightly steamed broccoli
A handful of mushrooms
Beans of choice
2 teaspoons of green pesto
2 cloves of garlic
1 can of coconut milk
Salt/Peper
Chilipowder

Serve with chili sauce & feta cheese (optional)

 

And here’s how easy it is:

IMG_8129Put the sesame seeds in a pan and fry them until they’re light brown.  Add the courghetti and balsamic and let it stay on low heat and stir it  around occasionally.

Add all the vegetables, coconut milk and pesto to a bigger frying pan. Turn on the heat and stir in it. Heat it to the point where it begins to boil and then flavor with salt/pepper/chili powder.

Once the spinach leaves has shrunk a little and the coconut milk has boiled for a couple of minutes, serve in a bowl on top of the courghetti, and top it off with feta cheese and chili sauce.
