Cool chocolate birthday cake
Amandish is turning 1 year today and in honor of that, here’s a simple unhealthy-made-a-little-healthier kind of birthday cake! Also a very warm-hearted thank you, to all of you who follows Amandish and helps spread the word, that healthy food can be easy and delicious.
2 tablespoons of coconut milk
3 teaspoons of coconut oil
2 tablespoons of kwark (or skyr)
100 g of chocolate (no darker than 60 % unless you like it bitter)
8 biscotti (italian cookies)
1 dl of almonds
Zest of an organic lime
What you gotta do to make this come true:
1. Roast the almonds for 2 minutes on a hot pan. This will add a nice smoked flavor for the finish. Put them a side to cool afterwards, chop them when they aren’t too hot.
2. Chop the chocolate and the biscotti.
3. Heat the coconut milk and oil in a pot, add the chopped chocolate and biscotti and give it a good stir.
4. Put some bakingpaper in a baking tin and pour in the chocolate-mix. Sprinkle with the chopped almonds and the lime zest. Keep it cool for at least 4 hours.
