No-time-turkey and bulgur salad
This recipe is a healthy, 20-minutes max in the making kind of dinner – and it will also do for a nice lunch the day after.
All you need for about 3 people:
250 g of turkey meat (or chicken)
4 dl of rough bulgur
8 dl of vegetable broth
2 leeks cut and washed
2 tablespoons of curry powder
1 tablespoon of olive oil
What you gotta do:
1. Heat the oil in a pan and throw in the meat and curry. Fry it for about 2 minutes or until golden. Then put it aside and keep it warm.
2. Fry the rough bulgur on the pan for a minute and then add the broth. Put on a lid and let it simmer for 5 minutes, until the water is almost soaked into the bulgur.
3. Pour in the sliced leeks, some salt and pepper and let it simmer, without a lid – stir occasionally.
4. Squeeze the juice out of the orange, over the turkey meat and serve it all together in a bowl. It doesn’t get much easier than that!
