Easy Egg Salad
Christmas is just around the corner and so is the many christmas family lunches. To help you get through the christmas, without too much holiday weight, here’s my new favorite egg salad. It’s low on fat and high on proteins.
What you need:
2 eggs (medium to hard-boiled)
200 g of cottage cheese
1 teaspoon of light mayo
A dash of curry (and fairy dust if you have it)
Salt/pepper
This is how easy it is:
1. Peel your eggs, chop them in little squares and mix all the ingredients together.
2. Stir it twice and serve it nice.
Now, how’s that for lunch-time?
