Hangover brunch (Scandinavian Brunch) with Kookkunsten

This saturday Amandish got together with Kookkunsten and served a Scandinavian brunch for the sweet people who showed. Below you will find all the recipes from the menu! menu menu menu


I used a Danish mix for my rye bread, so there is no actual recipe – any rye bread will do.

The idea is just to build up your slice of bread with salad, delicious toppings and greens. I went for boiled potatoes, eggs and tuna salad.

For the tuna salad I used:

2 cans of tuna
3 tablespoons of mayo
5 table spoons of greek yoghurt (or more – depending on how thin you like it)
½ can of corn
½ a red onion
Salt / pepper

On top of it all you can add sliced cucumber, tomatoes, lemon, paprika and so on.



What you need:

10 eggs (I used organic because it did make it a bit more delicious!)
A little oil
Salt / pepper

What you do:

Whip the eggs together in a bowl with a pinch of salt, pour the oil into the pan and add the eggs. Let it simmer on low heat, with a lid on the pot, until it’s firm. Sprinkle ground pepper and chives on top.


STRAWBERRY TART (a summer favorite!)

What you need for the bottom:

1 banana
100 g of chopped almonds
2 dl oats
2 eggs
1 big spoon of flourJordbærkage (3)

What you gotta do:

Mash the banana in a bowl and add the rest of the ingredients. Mix it all together and bake it in a cake form in the oven at 200 degrees for 7 minutes.
Once the bottom is ready put about 10-20 g of dark chocolate on the warm tart and let it melt upon. Let it cool until the chocolate is firm.

The cream:

100 g of coconut milk
1 yolk
The inside of ½
a vanilla pod
½ a teaspoon honey
1 tablespoon potato flour
2 big spoons of greek yoghurt

What to do:

Put all the ingredients, except the greek yoghurt, in a pot and bring it to the point where it’s almost boiling. Let it simmer while stirring for 1 minute and then let it cool completely in the refrigerator. When you are ready to put the cake together, add the greek yoghurt to the cream and spread it on the cake. Top it off with fresh strawberries cut in half.

The true ingredient to making this delicious is the homemade granola.

What you need for 1 jar:

100 g of almonds
100 g of hazelnuts
100 g of sunflower seeds
100 g of pumpkin seeds
3 dl of oats
2 tablespoons of brown sugar
2 tablespoon of honey

Optional: dried fruit – cranberries



What to do:

1. Cut all the nuts as fine as prefered, spread it on a baking sheet with the oats and bake it for 10 minutes in the oven at 200 degrees.

2. Pour the honey, brown sugar and some dried fruit over the mix and bake it for another 5 minutes in the oven. Store in an airtight bag or jar.

Loyal Amandish followers might have discovered by now, that pancakes are a guilty pleasure of Amandish.
Non the less – here’s a crazy simple and delicious edition.

All you need:bananpandekager (2)

1 banana
2 eggs
1-2 tablespoons of flour
1 teaspoon of cinnamon

What you do:

Mash the banana and add the rest of the ingredients. Prepare them on a pan like any other pancake. If you wanna top it up a notch serve it with freshly cut mint leafs and berries.
