Bean salad

An easy, cheap and healthy bean salad with a nice marinade on top!

All you need:

Beans – I used a can of lima beans, a can of black beans and string beans
1/4 aubergine sliced in squares
1 little red onion

For the marinade:

Juice of ½ a lime
A handful walnuts
2 spoons of olive oil
A pinch of salt

 What you gotta do:

1. Heat the caned beans in a pot for a couple of minutes. Put the string beans in a pot, add a little water to the bottom and steam them until they have the consistency you like. When they’re almost done, add the aubergine.

2. Slice the onion and put it in a bowl. While the beans cool mix together the ingredients for the marinade. Stir until it’s dissolved and.

3. Add all the ingredients to the bowl and pour the marinade over.
